In the Atlantic Highlands on a beautiful Sunday afternoon, The Flaky Tart hosted a cooking class titled April in Paris. Chefs Zeet Peabody and Marie Jackson kept all of the students busy learning the techniques of mise en place, whisking, and the art of whipping up master sauces such as Bechamel and Mayonnaise. Starting everyone off with an aperitif of Lillet with a splash of seltzer water and a slice of orange, it did indeed set a French mood.
In the New York Times restaurant review section this weekend I found a critic who might just be a kindred spirit. David Kocieniewski wrote a terrific review for this restaurant that has impressed me so much that I have written about them on my blog, Black Eyed Susans’ Kitchen, here, here, and on this blog here. There is a little thrill of validation when others agree with you.
So you know how to cook; well yes, most of us do. However, when offered the opportunity to learn from professional chefs, especially those who work in and own a very popular restaurant it becomes almost an obligation to attend such a class.
Last post in my trilogy of the JOCEF fundraiser. This was in my humble opinion, the biggest surprise of the night. Like mermaids rising from the briny sea, the women you see picture were indeed, Oyster Girls. They shucked oysters for you on the spot. To say this fund raiser was a fun time would be an under-estimation. The people who planned this out should take their bows…they produced a spectacular show.
